The
old “da Bigât” hostelry was once
popular with intellectuals and workers, who would
chat over a steaming plate of tripe, stockfish or
“farinata” (a crunchy chick pea cake).
The premises on Via Mazzini were also popular with
the Brentau, figures who, until around 1950, performed
a typical job exclusive to Acqui Terme: using a 50-litre
recipient (brenta, hence the name), they drew the
water that flowed from the “two mouthed”
Bollente spring at 75ºC and delivered it to the
families who requested it. The local people of Acqui
Terme were defined as “sgaientò”
(scalded) because, as soon as they were born, they
were immersed in Bollente spring water carried to
the home by the Brentau. During their work breaks,
the Brentau used to stop at “da Bigât”
to eat the classic “merenda sinoira” (an
abundant high tea).
