Bigât”’s version of this dish is part
of the local culinary tradition. According to the locals
and experts, it is the best in the whole province. Its
success lies in its carefully dosed ingredients, the
fact that it is cooked in a wood oven using a particular
sort of wood, and, above all, in the use of authentic,
top quality produce. The “farinata” (crunchy
chick pea cake) has ancient origins (it is thought to
date back to the Saracens).
